Working with higher hydration enriched breads is a focus along with shaping and baking techniques. Get ready for a season of giving and hosting by mastering these two seasonal recipes.

It’s time to get ready for Chrismukkuh! In this hands-on bread class, students will learn two of our favorite holiday recipes: challah and stollen. Both are enriched breads, perfect for snacking and gifting throughout the holiday season. These beloved classics should be in every baker’s repertoire, especially as they’re even more special when made with 100% whole grain flour.

We’ll share tips for how to handle higher hydration enriched dough, which can be a little tricky. We’ll also have fun with braiding and shaping challah, focusing on the 6-strand braid and the crown. Our stollen recipe begins with a miller’s choice flour blend created for richness and depth to highlight all the bright and tangy dried fruit folded within.

Each student will take home a loaf of each holiday bread, made and shaped by hand during class.
