Big changes are coming to Grist & Toll

For many years, the goal has been to devote more time to classes, educational events and research. Finally, the pieces are in place to do just that. Grist & Toll has a sister business: the newly formed nonprofit, True Grist Corp. More details will follow, but 2025 marks the launch of this exciting new phase. It also means changes to the current Grist & Toll business model.

The week of February 17th will be the final week for retail hours at the mill.

Beginning February 23, 2025, all flour purchases will need to be placed online via the Grist & Toll web store. A great deal of time and effort has been put into figuring out how to make this a little less disruptive.

*Online purchases now have more shipping options, including USPS flat rate boxes, so we are no longer subjected to the extremely high FedEx rates.
*Local customers can also select “mill pickup” at checkout to pick up in person instead of shipping.
*HOWEVER, the hours for picking up web orders will be limited to Wednesdays and Thursdays from 11:00-5:00.
*These hours will strictly be to facilitate local pick ups of online orders, not traditional shopping.

Going forward, your flour purchases will directly fund research and educational projects, such as school lunch efforts, food bank projects, wheat seed research, milling and flour research, whole grain baking video tutorials, and if we’re lucky someday a book or two. What has been the retail shop will transition into a teaching space for more hands-on classes.

Together, we have managed numerous inconvenient market realities and stressors, such as gluten fear/hatred (still working on that one, lol!), the COVID pandemic, sustained entertainment industry strikes, changing national politics, fires, more fires, floods and devastation. Recent market conditions have not been kind to Angelenos or small businesses across the board.

Please know that the goal of these changes is to move the business forward in a deeper and more meaningful way, while still providing a way for finely milled whole grain flour to find its way into your kitchens. Times are tough, but the mission remains. Please hang in there with us while Grist & Toll and True Grist Corp. forge a new path together. If all goes well, there is even more beautiful flour in our future.
