2.5 pounds of whole wheat durum flour. Traditionally, durum wheat is the pasta wheat. However, we love it for focaccia (100%) flatbreads and as a percentage of a flour blend for bread. Typically, we max out at 30% durum but there are many regional European recipes that call for durum flour. This is a whole durum flour, not semolina – semolina is a sifted or refined flour.

Durum Iraq is one of Monica Spiller’s selections made in order to re-introduce landrace wheat varieties that show excellent promise for yield and baking characteristics, climate change and drought tolerance.
Durum Iraq flour has a beautiful golden color with warm, toasty flavors. It is an excellent choice for making pasta. Durum is a very hard wheat, but typically has weaker gluten. However, you should absolutely rotate it into your bread baking recipes in smaller percentages. We are partial to 100% Durum Iraq focaccia and flatbreads.
