FALL 2022 Baking Class Schedule

Hands-on classes are back! We are very excited to launch our first series of classes in over 3 years. Some classes will be held on site, at Grist & Toll, while others will graciously be hosted at Friends & Family cafe in Los Angeles. Class locations are listed in the event descriptions. OCTOBER 8TH, 2022 at GRIST & TOLL, PASADENA, CA
BREAD CLASS: SOFT SOURDOUGH


Yes, 100% whole grain sourdough bread can be soft and tender! Come learn 3 formulas that incorporate different techniques and grains to give us that soft crumb with universal appeal. We’ll be exploring hydration percentages, levain percentages and utilizing tangzhong.
Experience feeding, maintaining and baking with your own sourdough culture is required for this class.

OCTOBER 16TH, 2022 at GRIST & TOLL, PASADENA
BREAD CLASS: SOURDOUGH TUNE-UP

Our first sourdough tune-up class sold out so quickly we’ve added a second chance for those of you who either missed the opportunity or couldn’t attend on the previous date. Bring your starter for analysis if you’d like. We’ll be covering all the basics here, reminding you how to manage the process and get that open crumb using 100% whole grain flour.

OCTOBER 30TH, 2022 at FRIENDS & FAMILY, LOS ANGELES
BREAD CLASS: MAGICAL SOURDOUGH PAN LOAVES

There is so much joy to be had in sourdough baking beyond the most traditional boules and batards. This class will be a deeper dive into exploring sourdough percentages, grain selection, and inclusions (aka all the dried fruit and nuts!), with the goal of expanding your sourdough arsenal. Above all, this class will introduce you to formulas that yield some of the most delicious 100% whole grain sourdough loaves you can make while also removing a lot of the stress and drama that comes with shaping and building tension in dough. Here we will focus on flavor and ratios, making magic in a pan.
Experience feeding, maintaining and baking with your own sourdough culture is required for this class.

NOVEMBER 13TH at FRIENDS & FAMILY, LOS ANGELES
SKILLS CLASS: LAMINATION FOR BEGINNERS

Extra excited for this class! If you hope to one day take our 100% whole grain croissant class (in the works for later this fall), this is the training class you need. We’re going to teach and reinforce the basics of folding and then locking in butter to create those flaky, buttery layers. Learning these essential skills and techniques will up your baking game forever. Students from this class will be given priority registration when our croissant class goes live.
