India-Jammu is a landrace wheat and one of Monica Spiller’s selections for California grain growers. As a hard white wheat, it is one of the few landrace wheat varieties planted that has comparable baking strength to some of the modern bread wheat varieties. Use as a stand alone flour for sourdough bread, pizza and pasta, but please also incorporate into your pastry baking as well. The lighter color and flavor is suitable for almost anything.
*As always, whole grain flour, no matter which grain or variety will need a little higher hydration.

India-Jammu is a landrace, hard white wheat. If you have been searching for something like Sonora but with stronger bread baking ability, here you go. You’re welcome! This flour is very fine for a whole grain, but slightly more golden in color than Sonora- almost like a durum wheat. Wheat Commission lab results and our baking tests here show excellent gluten strength. Use India-Jammu as a stand alone bread, pizza and pasta flour for sure, but don’t shy away from baking pastries with it as well.
